The WebExibit Color Vision & Art is an excellent source for this class. It provides an exploration of the simultaneous emergence of modern art and scientific studies of perception. The interactive demos are particularly helpful.

Bruce MacEvoy's Color Vision site gives a comprehensive overview of color vision theory for painters.

The web tutorial The Bases of Color Vision composed by Brian Thomas Wagner and Donald Kline of the University of Calgary is another excellent source of color analysis. This site is particularly strong on the neurophysiology.
